A different path from the yeast waffles I usually make, these are just as wonderful! The yogurt adds a heartier touch and a soft fluffy interior. For a quick to make waffle breakfast, this recipe is your saviour!
1 hour Makes 8 waffles
You will need:
2 eggs, separated
½ cup Yogurt*
1 cup milk
1 tsp Vanilla
¼ cup Butter, melted + extra for greasing
â…“ cup Sugar
1 ½ cup Plain flour
¼ cup Cornstarch*
½ tsp Salt
1 ½ tsp Baking soda

Preheat your waffle iron while you prepare the waffle batter.

Separate the eggs and set the whites aside.

Into the egg yolks, add the rest of the wet ingredients.

Mix the dry ingredients in a bowl.

Whisk the egg whites to soft peaks in a clean bowl.

Sift the dry ingredients into the wet mixture. Mix until almost incorporated. It’s okay if there are lumps of flour.

Fold in the egg whites in parts and do not over mix.*

Brush your waffle iron with some butter and scoop batter into the waffle iron and cook according to manufacturers instructions.*

Once golden brown in colour, remove the waffles onto a wire rack and allow the steam to escape so they can crisp up.

Serve hot with your choice of toppings! (Nutella, fresh fruits, jam, maple syrup, etc)

*Notes:
Most waffle batters use buttermilk to get a nice flavour, but yogurt works too. It is a much better option to the milk and vinegar alternative. And it works as a wonderful leavener with the baking soda.
I know cornstarch sounds a bit out of the place in a waffle batter, but trust me this will make all the difference between your waffles being soggy or crunchy. The cornstarch helps soak out excess moisture and prevents your waffles from having a soft exterior.
Whipped egg whites is all the magic a fluffy waffle needs. The air packed into the egg whites from whisking, adds loads of volume to the batter, resulting in a pillowy, light waffle.
Every waffle iron is different, therefore the cooking times may wary too. Mine takes about 5-6 minutes. Also keep in mind the hot spots of your waffle iron (if any) and and rotate the waffles accordingly to get an even colour.
The waffles will be a little soft when you take them out of the waffle iron, but a few minutes on a cooling rack gives them a crunchy exterior.
Waffles store well in the freezer and make for a good snack. You can make a big batch and store them in air tight bags in the freezer. And whenever you feel like having a waffle, just take one out and stick it into the toaster. Job done! 😎
