rainbow swirl Vanilla cupcakes
Moist and light, pale yellow sponge with the floral aroma of vanilla - you can never go wrong with vanilla cupcakes. So simple and yet so delicious.
Jazzed up with rainbow swirls of buttercream, we have a winner!
1.5 hours Makes 12 cupcakes
Vanilla cupcakes
125g plain flour
125g castor sugar
125g butter, softened at room temperature
¼ tsp bicarbonate of soda
¼ tsp vanilla
2 eggs
1-2 tbsp milk
You will need:

Whisk butter, sugar, eggs, milk and vanilla in a bowl.

Sift in flour and bicarbonate of soda and combine.

Divide the batter among 12 lined cupcakes moulds.

Bake in a preheated oven at 170°C for 20-22 minutes.
Buttercream icing
100g butter, softened at room temperature
225g icing sugar, sifted
1-2 tbsp milk
Preferred food colouring

Whip the butter using an electric whisk for 5 minutes till pale.

Add in half of the icing sugar and whisk for 3-4 minutes.

Add remaining icing sugar and whisk for another 3-4 minutes.

Add in vanilla, and milk to adjust consistency.

Divide the buttercream into separate bowls and add in food colouring. I used green, red and yellow.

Fill a nozzle attached piping bag, one spoon at a time, alternating the colours.

Twist the end of the bag to seal it and use to decorate the cupcakes.
