20 mins. prep; 3 hrs resting        Makes 2 "10-inch" pizzas

  1. Combine water, yeast and sugar; set aside for 5-10 minutes to activate.

  2. Sift together the flour and salt in a bowl.

  3. Add the yeast mixture and olive oil.

  4. Knead for 8-10 minutes to form a smooth and elastic dough.

  5. Divide into 2 portions and roll into balls.

  6. Coat with some oil and place in an oiled bowl.

  7. Cover with plastic wrap or damp kitchen towel.

  8. Rest for 2-3 hours or till the dough is double in size.

Assembly

  1. Preheat your oven, along with a pizza stone or a tray to cook the pizza. Line another flat tray with baking paper and set it aside.

  2. Tip out the proved dough onto a well-floured worktop. Begin to stretch out your dough, working from the centre to the edges. Alternatively, you could use a rolling pin.

  3. Once you have your desired crust (0.5 - 1 cm thickness), transfer it onto the baking paper lined tray. Spread out the dough again if it shrinks a little.

  4. Dress with your favourite toppings.

  5. Transfer the pizza along with the baking paper onto the hot pizza stone/tray in the oven. Bake at 220°C for about 15 minutes or until the crust is golden brown and the cheese has melted.

We've got pizza, people! Enjoy it piping hot and continue making more!
