Buttermilk

pancakes

 30 mins             Serves 2

You will need:

1 egg
4 tbsp sugar
1 cup buttermilk
1 tsp vanilla
1 cup plain flour
½ tsp baking soda
¼ tsp cinnamon powder
¼ tsp salt
Butter, for greasing the pan

  1. Separate the egg whites and egg yolk in two different bowls. Whip up the egg whites to stiff peaks and set it aside.

  2. To the egg yolk, add sugar, vanilla and buttermilk. Mix well.

  3. Sift in the remaining dry ingredients and mix.

  4. Fold in the egg whites until almost incorporated. The batter should be well aerated.

  5. Pour batter onto a pre-heated pan, greased with butter, to make the pancakes. You can make them any size you prefer.

  6. Let the pancakes cook for about 2 minutes or until bubbles appear on the edges, then flip them over and cook for another minute. 

Stack ‘em up, drizzle over your favourite toppings and dig in!
