with walnut streusel
You say “fall”, I say “apples and cinnamon”. Nothing beats this wonderful combination.
Warm apple muffins with a hint of cinnamon and crunchy walnut streusel on the top. Mmmm!
1 hour Makes 12 muffins
You will need:
1 ½ cups plain flour
½ cup castor sugar
¼ cup butter (room temp)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½cup plain yogurt/ buttermilk
1 tsp ground cinnamon
1 tsp vanilla extract
¼ cup milk
2 eggs
2 apples, peeled & grated
â…” cup chopped walnuts
1 tsp lemon juice

Streusel topping:
3-4 tbsp sugar (granulated white/brown sugar)
3 tbsp plain flour
¼ tsp ground cinnamon
3 tbsp butter, cubed & chilled

Measure out the dry and wet ingredients in separate bowls.

Add dry ingredients to the wet ingredients along with grated apples and chopped walnuts and mix.

Divide the batter between 12 lined muffin moulds.

Mix the flour, sugar and cinnamon in a bowl for the streusel.

Rub the cold butter into the flour and sugar to obtain a crumb-like consistency.

Top the muffins with the streusel mixture.

Bake in a preheated oven at 190°C for 20-25 minutes. Serve warm.
